Barbaresco our story

The owner and inspirational chef Yannis Spahiu, with many years of experience in award-winning restaurants in Athens such as Varoulko, Brunello and Cookoovaya, opened Barbaresco Pizza in 2021 in order to introduce us to the tradition of the famous pizza romana.

After much experimentation and testing, he created the ideal recipe for the dough of pizza romana alla pala. The difference is that the ingredients are added fresh after the dough is baked, while the pizza is served in a shovel-like tray, which is called pala in Italian.
